
Kare Kare - The Peanuty one
Let's talk about Kare-Kare, a Filipino classic that's pure comfort in a bowl. While often made with meat, this version focuses on its rich, savory heart – that incredible peanut sauce. We're talking a thick, luscious stew, gently simmered with a beautiful array of vegetables like crisp bok choy, earthy eggplant, and tender green beans. The star, of course, is that unique, nutty flavor from ground peanuts, often enriched with toasted rice. It's wonderfully satisfying, deeply flavorful, and just wraps you in a warm hug. Ingredients
FIllings
- 1 Aubergine
- 2 Pak Choy
- 2 cup Green Beans
- 2 Portions Tofu or Seitan, Protein of choice Optional extras!
Sauce
- 1 tbsp Neutral Oil
- 2 cloves Garlic
- 1/2 Onion
- 1 tbsp Peanut Butter
- 1 tsp Vegetable Stock
- 1/2 tsp Tumeric
- 1 tsp Hendersons Relish This adds umami! You can add a smidge of marmite or omit completely. It's still super tasty.
Method
The Prep
- Slice Aubergine into batons, lightly coat in oil and air fry for 10 mins on 190cAdd in your proteins / pan fry if you want them to be crispy or save to add to the curry for maximum flavour soaking.
- Slice Pak choy in halfs (or chunks if you don't want to battle with it), and top and tail your green beans.Dice your onion finely and chop your garlic.
The Sauce
- Heat the oil and reduce to low heat before adding your garlic. Stir continuously until golden before adding the onion to soften.
- Add Peanut butter, stock and hendersons relish to create a paste - let this release some oil before slowly adding water then leave to simmer for 5 minutes.
- Add your green beans, and proteins then let simmer for around 5 minutes.Stir then add the Pak Choy and allow to steam. Alternatively char Pak Choy halves and add when plating for full visual effect.
- After the Kare Kare has been cooking for 10-15 minutes it's ready to serve.Pour over rice and Aubergines for a beautiful show stopping comfort meal.Top with crushed peanuts and spring onions before enjoying your Pinoy masterpeice.
